For more than 45 years, our family at Ledge Haven Farm has been making one of nature’s purest and sweetest products - Vermont maple syrup. We take great pride in producing quality maple syrup available straight from our farm to your table.
History and Tradition
Ledge Haven Farm is located near the shores of beautiful Lake Champlain in Orwell, Vermont. The Audet family has owned the farm since the early 1970's but the history of the property dates back to the American Revolutionary War. Down the road from Ledge Haven is historic Mount Independence, the site of Fort Independence, one of the most important sites of the early stages of the war. We have several historic structures on our property, including a horse barn from the 1860's and a hay storage barn from 1880, which is listed on the National Register of Historic Places.
Co-owners, Tom and Mike Audet, have run Ledge Haven Farm as a dairy and maple syrup operation for over 45 years. Today, a young farmer has taken over the dairy portion of the business. Tom and Mike, with the help of their wives and extended family, still continue to work together to make our delicious maple syrup. In the Spring, as daytime temps rise above freezing, the sap begins to flow. Sap is collected from the sugar maple trees using tubing hung from tree to tree. This is more efficient than the older bucket system. Our modern sugarhouse uses a traditional wood-fired evaporator. We use a reverse osmosis machine to concentrate the sap, reducing the wood and time required to boil the sap into great tasting maple syrup. Our maple syrup operation is certified by the Vermont Agency of Agriculture, which recognizes our building, equipment and procedures meet food quality standards.
Our maple syrup is all natural. It is delicious on pancakes, waffles, french toast or oatmeal. Try it on ice cream or yogurt for a special treat. Maple syrup can be substituted for honey or sugar. It is also used as an ingredient in baking or as a sweetener in hot drinks. Maple products make great gifts.
